Chablis Simmonet Febvre

Simmonet Febvre has one of the longest histories of winemaking in Chablis. Now owned by Louis Latour. This is a classic and well made dry style, with crisp, fresh and flinty notes, and crunchy apples, and a pleasantly long slightly saline finish.  

Food match: it's saline finish makes seafood a perfect match for this, whether that's oysters or monkfish.
